Terry's 60th: Croquembouche & Wine

Terry turned 60 this weekend, so we decided to celebrate!  In place of a birthday cake, we created a traditional French desert called a Croquembouche.  The Croquembouche is basically a cone shaped dessert piled high with profiteroles (or pastry balls/cream puffs) and bound together with threads of caramel.  Stunning AND delicious!  In addition to the profiteroles (which we served on the side), the dessert buffet included Macarons, Homemade Caramels, Peppermint Meringues filled with Chocolate Ganache, Cranberry Hazelnut Tartlets, Coconut Macaroon Sandwich Bites filled with Chocolate Ganache, Raspberry Linzer Cookies, Gingerbread Cookies & Pumpkin Spice Cupcakes.
